Sourdough Bread Rolls

Sour Dough Bread Rolls

Ingredients:

330g Bread flour

110g Whole wheat or smelt flour

9g salt

160g water

120g dairy milk

120g active starter

57g unsalted butter, softened to room temperature

For Brushing:

1 egg

1 tablespoon water

These sourdough rolls were definitely what I was most proud of at this years Friendsgiving. I have been working with sourdough for the past few months. This was my first attempt at rolls and they were an absolute knock out. For this recipe I took a few I found online and mixed them together with my own spin and hoped for the best.

Tips and Tricks: Make sure your starter is very active. It should double in size before you use it. I fed mine about 5 hours before I started this process. I invested in quality ingredients and I believe you could tell the difference this included Bobs Red Mill flour, Organic whole milk, Fresh pasteurized eggs, and Kerrygold butter.

Directions: Combine dry ingredients in a separate bowl and mix. In your stand mixer add starter, water and milk. Mix this until well combined. Add your dry ingredients to your starter mixture and kneed with your dough hook on a low speed for 5 mins. If you don’t have a Stand mixer you can kneed this by hand. (Google, Tik tok and Youtube are great resources for kneeding techniques) This dough will be very sticky. Move your dough mixture to the countertop and Slap and fold in the room temperature butter. Continue to use the slap and fold method for about 5-7 mins. Place dough in a covered bowl in the fridge to cold ferment overnight. The following morning remove the dough from the fridge and begin to shape your rolls. This recipe makes 16 dinner rolls. Shape each piece into a tight ball by bringing all the edges of each dough into the middle, then flip it upside down so it’s seam-side facing down. Use flour as needed if the dough is too sticky to work with. Leave the dough balls to rise for 3-4 hours in a warm spot until doubled in size. Once doubled use your egg mixture and brush the tops of each roll. Bake at 392 degrees ( I know oddly specific) for 25 mins or until the rolls have reached a deep golden brown. Serve with butter and Enjoy!

The biggest event in my household. Friendsgiving

This tradition started 5 years ago when I realized the majority of my friend group was unable to go home for Thanksgiving. We were a roughy bunch of 21-28 year olds who were all finding our place in the world. Being the hosting gal that I am, I instead on cooking and hosting a traditional Thanksgiving meal. At the time I lived in an apartment complex in Hermosa Beach with an amazing rooftop that we utilized for this event. Long story short my first annual Friendsgiving was a hit and became a tradition that I look forward to each year.

Throughout the past 5 years I have made it my mission to level up each Friendsgiving, from food to place settings each years improvement continues to be something I’m extremely proud of. This Holiday for me has become a way to show those around me how thankful I am to have them in my life. Cooking a meal for others to enjoy is truly the most rewarding experience for me.

I was blessed this year to have new and old friends at my table. Every person has impacted my life in someway and to have them joined together around me was truly one of the best highlights of my year.
